It's been around for over a thousand years, first created by Buddhist monks in China as a vegetarian source of protein. It has a firm texture and can absorb different flavours, making it extremely versatile and work well in everything from stir-fries to sandwiches.

They contain vital wheat gluten, chickpea flour (or organic potato flakes for the shredded chicken seitan), and nutritional yeast.
